Keto Low Carb Calzones Quick Easy Meal Prep Option
Calzone's sounded like an excellent meal prep idea and so, I pulled out my mixing bowls, some precooked ground beef, all the ingredients for the dough and extras for the filling and got busy.

Forming Crust:  I use parchment paper and a plate to make beautiful circles.  You can make these  whatever size you like.  I go ahead and start dividing my dough once it's ready to insure I get 12 mini circles.  Form each divided piece into a ball and place it on an 8" square piece of parchment.  Using another 8" square piece, lay it on top of your dough ball and then evenly press the plate down until it is about  1/4" thick.

Crust Ingredients | 12 servings:
3 Cups of shredded Mozzarella Cheese
2 Cup of Almond Flour
4 tbsp cream cheese
2 egg
Pinch of salt
1 tsp of each: oregano, garlic powder, onion powder, and rosemary (all optional)
Your choice of toppings.
Instructions:
  1. Preheat oven (and pizza stone) to 400F
  2. Mix the cheese and almond flour in bowl, then add cream cheese.
  3. Microwave on high for 90 seconds
  4. Stir well, then microwave on high for another 60 seconds.
  5. Add the egg, salt and seasonings of your choice, mix gently until combined well

  7. Just be sure you don't forget to poke holes in the crust with a fork to keep them from bubbling. Make sure to keep parchment paper on the bottom.
